Dorsett Melbourne is dedicated to minimising waste and our footprint on the world. In the kitchen, menus are crafted using seasonal, local produce, that minimises importation of ingredients and maximises support for local suppliers. Waste is disposed of and recycled through our partnership with Bardee.
